Dutch Baby Brunch

Easter has always been a holiday my extended family has enjoyed with all sorts of fun games, an epic brunch spread, and lots of family time. I will miss hanging out with my parents, family, and friends this year to stay safe (and keep others safe) … but try to do my best to re-create the fun Easter celebration at home with my immediate family. The Easter bunny will hide eggs in our garden, while we read The Golden Egg book like we always do, then the kids will race outside with their baskets to collect the eggs. There is always a special prize for the child who finds the Golden Egg! While all this happens,… I watch with a smile and mimosa in my hand, knowing there is brunch to eat! I have been testing some quick easy brunch recipes since I will be cooking up the entire brunch this year instead of our usual potluck style shared spread. This recipe will save you time to relax and enjoy your family.
Ingredients
Serves 3-4 with sides
• 3 T unsalted butter
• 3 eggs
• 3/4 cup milk
• 1/2 cup flour
• 2 T sugar
• 1/8 t salt
• 1/2 t vanilla
• *optional 1/2 c fresh or frozen fruit cut in chunks
Pre-heat oven to 425*
Melt the butter in a 10-inch ovenproof frying pan on the stove top. * I used a cast iron skillet. Careful not to brown the butter, just melt it, then remove from heat.
In a blender, whirl all the ingredients together except for the fruit chunks if using.
Pour the contents of the blender into the skillet, add the fruit chunks, and put it all directly into the oven.
Bake until puffed and golden, 15-20 minutes.
Serve with powdered sugar, more fresh fruit, or syrup.
This is a pretty light dish, so you can make some quick roasted potatoes and scrambled eggs to round out the meal.
