Jackfruit Taco Tuesday
Every Tuesday dinner in our house is, you guessed it,… TACO TUESDAY! Who doesn’t love a taco?! But, as a vegetarian, I get a bit tired of the same beans and rice fillings. I like to mix it up with different fillings like grilled poblano peppers, grilled mixed mushrooms, fried nopales, or grilled corn. There are luckily, so many options, but one of my favorite hearty fillings is jackfruit.
Ingredients
Serves 4
1 TBS olive oil
1/2 onion thinly sliced
1 jalapeno pepper minced
2 cloves garlic minced
1 20oz can green jackfruit (remove seeds)
juice of 1 orange
1 TBS red wine vinegar
2 TBS soy sauce
1/2 TBS liquid smoke
lime juice to taste
Spices- 1/2 TBS nutritional yeast, 1/2 TBS smoked paprika,
1/2 TBS dried oregano, 1/2 TBS ground coriander, 1/2 TBS ground cumin, 1/4 tsp ground black pepper
1. In a skillet, (I use my cast iron) heat olive oil and saute onion, garlic, and jalapeno for 5 minutes.
2. Chop up jackfruit and add to the onion mixture. Saute for 5 more minutes to cook off some moisture.
3. Add the blend of spices to the pan along with the rest of the ingredients.
4. Simmer at low heat for 15 minutes until the liquid is absorbed and cooked down.
5. Season to taste with salt and lime juice.
6. Serve in a taco shell with other toppings of your choice. I enjoy pico de gallo salsa and fresh avocado.
